A couple years ago, I became a little, um, obsessed with baked potatoes. So much so that I may have talked about them all the time. So much so, that my friend began teasing me about my fondness for the baked potato.
It’s ok, I’m not ashamed of my baked potato love.
In fact, I’m happy to spread the word. Potatoes are a great food to add to your diet if you’re trying to eat real food but have a small budget. They can be cooked several different ways and are cheap to boot. (They are on the dirty dozen list, so buy them if you can. Better yet, grow them!)
Baked potatoes are great to put on the menu for days when you’ll be busy, or if you have company over that you want to feed well without spending a ton of money. And they make a great vehicle for butter. Mmmm, buter.
Without further ado, here are my 5 favorite ways to enjoy zee baked potato:
Baked and topped with goodness
My new favorite way to enjoy a baked potato is to top it with bacon and broccoli that I’ve sautéed in bacon grease. Yum. Throw on some shredded cheddar and sour cream and you’ve got a complete meal.
Sausage or beef are also good or you could go the vegetarian route and just do veggies and cheese. Chili is another delightful way to go.
I first tried twice-baked potatoes at a fancy restaurant and I was in love. Seriously, I had to go home and make more because they were soooo good. I know there are different methods, but I like to bake my potato, cut them in half and scoop out the insides.
In a bowl I mix in copious amounts of shredded cheddar cheese and sour cream. Add some salt and pepper, maybe some garlic, mix and refill the potato skins. Bake to make the cheese melt. Yum. And I’m sure they’d be even more amazing if you threw some bacon in there.
I always bake several potatoes at a time and the next morning I shred them up with the cheese grater. I don’t take the peel off – the grater does it for me. Toss them in a pan with some coconut oil and you get some tasty hashbrowns. I just season them with salt and pepper.
Another great way to enjoy your potato after it’s been refrigerated overnight is to make home fries. Just cube the potatoes and season with salt and pepper. Sautee in coconut oil, butter or ghee with minced garlic for a delicious breakfast or dinner treat.
