Homemade Tomato Basil Hummus

I was hooked on this hummus after purchasing it at Trader Joes. Combined with pita chips, it was easily one of my favorite snacks. But, being the frugal woman that I am, I decided that I’d better learn how to make this tasty treat if I wanted to have it as frequently as I’d like. Here’s a quick, easy recipe that you can whip up in just a few minutes.

In a food processor or blender combine the following:

2 tbsp olive oil

3 tbsp basil, finely sliced

2 cloves garlic, minced

1 1/2 c drained chickpeas/garbanzo beans (You can cook up some dried ones or use a 15 oz. can of cooked beans)

2 tbsp sesame tahini (found at Trader Joes)

1/2 tsp salt

1 small can tomato paste

1/2 small sweet onion, chopped

Put all the ingredients into your food processor and chop until smooth. This is really good with pita chips. However, since I’ve had to cut out grains, I’m happy to report that it’s great with a wide variety of veggie sticks.

* To save even more time, use 5 tbsp of delicious pesto and omit the olive oil, garlic and basil.
