I talk about menu planning sometimes, but it’s been a while since I’ve actually posted a menu plan on here. Planning our meals in advance saves us a lot of time and money. I also love that my husband sees what’s on the menu and starts making dinner. Thanks honey. :)

I’m posting a menu plan for you today, in honor of Modern Alternative Kitchen. Every Monday, they have a lovely link-up to several different menu plans, which I hope will inspire you as you plan meals out for your family.

Here’s what’s on the menu for us this week:

 

Monday

Breakfast: Oatmeal, smoothies, hard-boiled eggs

Lunch: Leftovers from a BBQ at a friend’s house

Dinner: Yellow chicken curry, veggies & rice

Tuesday

Breakfast: Scrambled eggs, fruit, toast (everyone but me)

Lunch: Curry leftovers

Dinner: Beans, cheese, rice & salsa. Probably over chips.

Wednesday

Breakfast: Omelettes, fruit

Lunch: Leftovers!

Dinner: Chicken & veggie stir fry with fried rice

Thursday

Breakfast: Oatmeal & smoothies

Lunch: Leftover stir fry & rice

Dinner: Chili & cornbread

Friday

Breakfast: Homemade Pop Tarts (I really want to try these slightly healthier treats) and yogurt

Lunch: Leftover chili

Dinner: Garlic rosemary potatoes, roast chicken & carrots

Saturday

Breakfast: Pancakes, fruit, hard-boiled eggs

Lunch: Popcorn, carrot sticks, apples with peanut butter

Dinner: Chicken & veggie soup

Sunday

Breakfast: Frittata with tomatoes & basil

Lunch: Leftover soup

Dinner: We have Sunday dinner at my parents’ house every Sunday.
