What do you do when you get to your camping trip, looking forward to sharing mojitos with your best friend, only to realize that you’ve forgotten most of the ingredients?

As we were planning the camping trip, there were several Facebook messages and texts back and forth about who was bringing what. There was even a shared Google document involved because, well, that’s just how we roll. (How many shared docs do we have now, Dusti?)

Anyway, at one point I got a message asking what cocktails we would have (also how we roll). She asked what sounded good, to which I replied with a very helpful, “Um, I don’t know.”

When she suggested mojitos I responded with an enthusiastic yes. I have a ton of mint growing in my garden, which is perfect for mojitos. She said she’d get the rum. Perfect. We were going to have mojitos.

So, um, yeah, I forgot the mint. And she forgot the rum.

After our initial moment of sadness after we figured out we were missing some very essential ingredients, we realized we could improvise our mojitos.

And since I’d brought my Malibu rum (I love coconut), I had a hunch that it would be even better than what we would have made. I was right.

Between the two of us, we had everything we needed to make some delicious mojitos: peppermint essential oil, raw honey, club soda, Malibu rum and a whole lotta limes (thanks for having such a great sale on limes, Safeway).

We guessed at how much we needed of each, threw everything in a glass, experimented some more and came up with a pretty awesome beverage, which we like to call Hippie Coconut Mojitos.

Here’s the recipe.

Hippie Coconut Mojitos

  • 1 Tablespoon honey or evaporated cane juice (sugar)
  • 1 lime
  • 1/4 cup Malibu rum
  • 3 mint leaves or 1 drop of peppermint essential oil from a 5/8 dram sample vial (if it comes from a regular bottle, it will be too much)
  • 1 cup coconut lime kombucha (a recent discovery that knocked my socks off) or club soda
  • 1/2 cup ice
  • Pint-size mason jar
  • Cuppow (I love these things)

Step 1

If using mint leaves, roll the mint up and slice thinly. Roll the mint between your fingers to release the oils. Put the leaves in the jar, or, if your using the peppermint essential oil , give a light tap on the bottom of the 5/8 dram sample vial to make sure you get just one drop.

Step 2

Squeeze the lime juice and honey into the jar. Stir until the honey is dissolved (this may take a minute).

Step 3

Add the rum and kombucha/club soda to the jar and stir. Add enough ice to fill the rest of the glass. If you’re using one, put on the Cuppow and screw on your lid. You don’t want to spill your mojito, do you?
